Go-To Chicken or Egg Salad Roll-Ups

  • 4-8 ounces chopped chicken or 1-2 hard boiled eggs
  • 2-3 Butter lettuce leaves
  • 1/4 cup almonds chopped
  • 1/4 cup red seedless grapes halved
  • 1/4 avocado mashed
  • salt and pepper to taste


  • Mix all ingredients (minus the lettuce leaves) in a bowl. Spoon into butter lettuce leaves to make a nice wrap!


Hey! Feel free to change up the ingredients a bit on these. Swap out almonds for pecans or walnuts or get really fancy with Macadamia nuts. Likewise the grapes can be swapped out for fresh cherries, crisp diced or thinly sliced granny smith apple, or go sour/savory with the addition of pickles or olives.
