Grilled Peach-and-Avocado Salad

  • 1 large peach peeled and blended
  • 6 tablespoons extra virgin olive oil or avocado oil for a milder flavour
  • 2 tablespoons champagne vinegar or white vinegar
  • 1/2 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 3 large peach peeled and halved
  • 2 avocado peeled, pitted, and quartered (look for firmer avocados)
  • 1 tablespoon extra virgin olive oil
  • 6 cups arugula loosely packed
  • 1/2 cup feta cheese crumbled *optional micro-treat*


  • Process 1 peach, oil, vinegar, honey, salt, and pepper in a blender until smooth.
  • Preheat a grill to medium-high heat.
  • Gently toss 3 large peaches and the avocados in 1 tablespoon oil. Grill 2 minutes on each side or until charred. Let the peaches and avocado cool slightly, slice, and serve over arugula. Top with the peach vinaigrette and Parmesan (optional).
