Oonagh's "Cheezy Zoodles"
- 2 zucchini spiralized or peeled into noodles
- 1 medium sized carrot shredded or noodle-ified
- 1/4 cup thinly sliced red onion
- 1 tsp dairy-free basil pesto
- 1/3 tbsp garlic powder
- 1/2 cup of nutritional yeast
- pinch of Himalayan sea salt
- Chuck it all in a pan over medium heat and cook it until everything is soft and creamy.
- Can be used as a side dish or add a portion of tofu or beans as well for protein and call it a meal. YUM!
