Process 1 peach, oil, vinegar, honey, salt, and pepper in a blender until smooth.
Preheat a grill to medium-high heat.
Gently toss 3 large peaches and the avocados in 1 tablespoon oil. Grill 2 minutes on each side or until charred. Let the peaches and avocado cool slightly, slice, and serve over arugula. Top with the peach vinaigrette and Parmesan (optional).
