Instructions
  1. Wrap the tofu in a clean kitchen cloth and place it on a plate. Weigh the tofu down with a large can of veggies for 30 minutes. Cut the pressed tofu into 2-by-1/2-inch pieces.
  2. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  3. In a large bowl, toss the veggies (except the asparagus) and tofu pieces with the oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Spread the mixture on the baking sheet.
  4. Bake for 15 minutes, remove from the oven and add the asparagus, toss everything, and bake for 15 minutes more. The tofu will be lightly browned and veggies tender.
  5. Remove from oven. Taste and add additional salt and pepper if desired and serve.
