Instructions
  1. Heat the oil in a large skillet and sauté the onion, ginger, and garlic until softened, about 3 minutes. Add the edamame, carrot, and red bell pepperoni cook for 2 minutes.
  2. Add the peanut butter, lime juice, chili paste, salt, and a little water to thin out the sauce.
  3. Add the zucchini noodles and toss them so that the sauce coats them. Cook in the sauce for about 6 minutes.
  4. Remove the skillet from the heat, plate, and top with fresh basil and chopped peanuts. Enjoy.
