Vegan Tofu Yogurt
- 1 pkg silken tofu (lite/soft)
- 1 whole banana cold
- 2 tbsp nondairy milk
- 2 tbsp lemon juice
- Honey *optional
- Combine all ingredients in a blender, whizzing until smooth and creamy.
- Taste, adding a little honey if desired. (or simply drizzle over snack just before eating.
- Split into two equal portions in sealed containers. Top with 1/2 cup of fruit at snack time.
