Turkey Meatballs

Servings 8 3 to 4 balls each

Ingredients
 

  • 1 zucchini lightly chopped
  • 1/2 onion lightly chopped
  • 2 cloves garlic minced
  • 1/2 chopped red bell pepper
  • 1/2 chopped sweet potato
  • 1/2 cup chopped carrots
  • 2 pounds lean ground Turkey
  • 1 cup almond meal/flour
  • 2 large eggs
  • 1/2 teaspoon sea salt
  • 1/2 teaspoons black pepper
  • 2 tablespoons olive oil

Instructions
 

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • In a food processor, finely chop the zucchini, onion, garlic, red pepper, sweet potato, and carrot. Transfer to a large bowl and add the turkey, almond meal, eggs, salt, and pepper. Mix until well combined and form the mixture into 1-inch meatballs.
  • Place the meatballs on the the baking sheet and bake until cooked through , about 20 minutes. DELISH!
