Zucchini "Pasta" Aglio e Olio
- 3 medium zucchini
- 3 tablespoons olive oil
- 1/2 shallot finely diced
- 3 cloves garlic minced
- fresh basil chopped
- Wash the zucchini, chop off ends, and use a mandolin or a knife to cut the zucchini lengthwise into thin slices; the strips should be thin enough to bend. Cut the slices into fettuccine-size noodles and set aside. Or you can spiralize the zucchini.
- Heat the olive oil in a large skillet over medium-low heat and sauté the shallot until softened, about 2 minutes. Add the garlic and sauté for about 2 minutes.
- Add the zucchini noodles and sauté for 5 minutes until they are al dente. Season with salt and pepper and serve with fresh basil!
